Whenever I have the chance to eat some Indian food I’ll go for it! It’s definitely one of my absolute favorites. The flavors are so amazing and as I mentioned in another blogpost it’s pretty easy to find vegan dishes. Since eating out is quite expensive I tried to create my own Indian-inspired curry for the first time. If you have some extra Indian spices at home add as much as you want!
Zutaten/Ingredients (Serves 2)
½ Blumenkohl 2 Pilze ½ Paprika 4 Cocktailtomaten 1/3 Tasse Kichererbsen ½ Zwiebel etwas Ingwer Koriander ½ Dose Kokosmilch ¼ Dose passierte Tomaten Schuss Reisessig Reis Sesam Salz, Pfeffer, Chiliflocken, Gemüsebrühe, Agavendicksaft, ½ TL Kurkuma, ½ TL Curry Pulver |
½ Cauliflower 2 Mushrooms ½ of Red Pepper 4 Cocktail Tomatoes 1/3 cup of Chick Peas ½ Onion some Ginger Cilantro ½ can of Coconut Milk ½ can of chopped Tomatoes a splash of Rice Vinegar Rice Sesame Salt, Pepper, Chili Flakes, Vegetable Stock, Agave, ½ tsp of Turmeric, ½ tsp of Curry Powder |
Zubereitung
Beginne damit, die ersten vier Zutaten gründlich zu waschen und die Zwiebel sowie den Ingwer zu schälen. Schneide anschließend das Gemüse und die Pilze klein, bevor alles mit den Gewürzen angebraten wird.
Gebe nach ein paar Minuten die Kokosmilch, die passierten Tomaten, den Reisessig und die Kichererbsen (vorher gut waschen!) hinzu. Lasse das für ca. 15 Minuten leicht köcheln und bereite in der Zeit den Reis zu.
Sobald der Reis und das Curry fertig sind, muss das Gericht nur noch mit etwas kleingeschnittener Avocado und Sesam verfeinert werden.
Method
Start of by rinsing the first four ingredients and by peeling the onion and the ginger. Now cut the veggies and mushrooms into small pieces. Fry everything as well as the spices for a couple of minutes.
Move on my adding coconut milk, chopped tomatoes, rice vinegar and the rinsed (!) chick peas. Let it simmer for about 15 minutes, while you prepare the rice.
Once the rice and the curry is ready serve the meal with some chopped avocado and sesame.

Looks amazing, I love Indian food too but thought it would be really difficult to recreate at home. This looks super simple and yummy though, I’ll definitely give it a try :)
